Creamy Fruit Dip
3 oz. creamy goat cheese
6 oz. low-fat or skim Greek yogurt
1-2 Tbsp honey or sweetener of choice
1 c. sliced strawberries, bananas, apples, or other fruit of choice.
1 Tbsp lemon juice (optional)
Combine goat cheese, Greek yogurt, and honey in a bowl and mix thoroughly. Add lemon juice to sliced fruit to prevent browning.

Cucumber Avocado Salad
2 small-to-medium cucumbers, sliced about 1/4” thick
1 tsp salt
1 tsp sugar
1 Tbsp sesame oil
10-20 spring cilantro
5 garlic scapes
1 Tbsp ginger
1 chili, or cayenne, to taste
1 stick celery, chopped
1 avocado, pitted, cut in half
Combine cilantro, garlic scapes, ginger, and cayenne in a food processor, and process til they make a fine pesto texture. Remove to a bowl with the sliced cucumbers. Add salt and sugar, mix, and let macerate until juice forms, about 30 minutes. Add celery and sesame oil. Serve over half an avocado.
